Spaghetti Bolognese Sauce

What You'll Need

-l lb 90/10 Ground Beef (which I used) or ground turkey
-5 Cloves fresh Garlic Minced
-1 Cup Chopped Onions
-1 tsp Italian Seasoning
-2 cups Marinara Sauce (I used Aldi's Grandessa Chunky Style)
-30 Kalamata Olives (optional)
-8oz Sliced fresh Mushrooms (optional)

Step 1
Spray a non-stick pan with your favorite non-stick cooking spray

Step 2

Brown ground beef and onions over medium heat until beef is browned and onions are translucent

Step 3

Drain excess grease off of the beef/onion mixture.  Let the pan you used cool down then put the beef/onion mixture back  into the pan.

Step 4

Add  minced garlic to the beef/onion mixture and cook for 5 minutes (DON'T LET THE GARLIC BURN/BROWN IT WILL MAKE YOUR SAUCE BITTER!!!!!!!)

Step5

Add you marinara sauce and Italian seasoning to the beef/onion.garlic mixture and let it come to a simmer

Step 6

Once the sauce starts to simmer add the sliced kalamata olives and slice mushrooms(if desired)


Once the sauce comes to a simmer turn the heat to low and cook for about 30 mins. Stir the sauce every 10 mins or so to make sure it doesn't stick.

Serving Suggestions
-sprinkle with fresh basil leaves
-on top of a bed of your favorite pasta
-on top of a bed of your favorite steamed veggies (I suggest zucchini, yellow squash, green bell peppers, and onions)
-on a baked potato

Spicy Shrimp Salad

Salad served with cucumber slices,
roma tomatoes, and romaine lettuce
leaves.
This is a simple dish that is great for a light meal or can be transformed into an elegant appetizer for any get together.

What you'll need....

-1 lb medium cooked shrimp(roughly chopped)
-2 tbs of your favorite mayonnaise(I used Kraft Olive Oil Mayo)
-1 tbs plain Greek Yogurt(I always use Dannon Plain)
-2 stalks fresh celery (chopped finely)
-1/4 cup onions (chopped finely)
-2 tbs lemon juice
-cayenne pepper to taste (this will depend on how hot you like it)
-salt and black pepper to taste

Step 1
Combine mayo, yogurt, onions, celery thoroughly in a mixing bowl. It should be a nice chunky consistency.

Step 2
Add lemon juice and cayenne pepper

Step 3
TASTE!!! This is the the main component of the recipe so make sure the twang from the lemon juice and the kick of the cayenne is to your liking.  Make a mental note to yourself if you need to adjust.  You'll do that shortly.

Step 4
Gently fold your shrimp into the mayo mixture.  Make sure not to stir too hard.  That will cause your shrimp to break and your sauce to break down and separate once stored in the fridge.

Step 5
TASTE!! Now according to your taste add more lemon juice, cayenne, salt, and/or pepper(I prefer white pepper for this to keep a nice clean look).


That's it! A nice quick healthy shrimp salad that is as versatile as it is delicious.

Serving Suggestions
Depending on the occasion and your dietary preferences you can serve this in the following ways:

**When serving sprinkle either fresh or dried parsley for a nice contrast in color and a pretty presentation**

-on toasted whole wheat bread
-on top of sliced cucumbers (nice elegant appetizer)
-wrap it in leaves of either green leaf, butter, or romaine lettuce
-take a scoop and make a salad plate with fresh tomatoes, cucumbers, and lettuce leaves
